Mushroom Pasta

Serves - 4

INGREDIENTS

​

  • 1/2 lb pasta of your choice

  • 2-3 cloves of garlic - paste

  • 1 medium onion - finely diced

  • 2-3 tablespoons extra virgin olive oil

  • 12 oz chestnut mushrooms , finely sliced

  • 1 cup cream 

  • 1.5 cups grated cheddar cheese

  • salt and pepper to taste

  • oregano and parsley (optional)

DIRECTIONS

​

1. Bring water to boil in a medium sized pan, and add pasta. Cook on high heat till tender (7-8 mins) , drain and keep aside.

​

2. Heat oil in a pan, and add onions and fry on high heat till translucent. Add garlic cloves and saute till golden brown.

​

3. Add cream and mushrooms,cover with a lid, reduce heat to medium and let simmer for 10 mins till it reaches boil .

​

4. Once mushrooms are cooked ( they will reduce in size), add the cheese and lower the heat. Keep stirring till the cheese dissolves and the sauce thickens.

 

5. Add the pasta, and mix well. Add water if sauce is too thick.

 

6. Sprinkle oregano and parsley on top, cover the pan and allow it to stand for 2-3 mins before serving .
