INGREDIENTS

  • 1 whole egg

  • 2 egg yolks

  • 115g castor sugar

  • 2 tbsp cornflour

  • 400ml full fat milk

  • 2 tsp vanilla extract

  • 1 sheet ready rolled puff pastry

Prep Time : 1 hours

Cook Time : 30 mins

Serves - 12 tartlets

DIRECTIONS

1. Grease a 12 hole muffin tin and preheat oven to 200 degrees celsius (or 180 degrees celsius for a fan oven).

 

2. Put whole egg, 2 yolks, sugar, and cornflour in a pan and mix together. Gradually add milk to the mixture until it is well beaten and smooth.

 

3. Place pan on medium heat and stir constantly until mixture thickens and comes to a boil. Remove pan from heat then and add vanilla extract.

 

4. Place this custard mixture into a ceramic bowl with cling film and allow to cool.


5. Cut the pastry into two pieces and place on top of each other. Roll the pastry tightly from the short side into a log and cut into 12 rounds.

 

6. Roll each round into a disc and place each disc in the greased muffin tin.

7. Spoon in the custard mixture and bake for 20-25 minutes until golden on top. Cool for at least 5 minutes on a wire cooling rack before eating.
