Portuguese Pea Rice
INGREDIENTS

4 tbsp olive oil
-
1 portion of rice
-
2.5 equal portions of water
-
2 equal portions of peas (frozen or canned)
-
Salt to taste
Prep Time : 1 hour
Cook Time : 30 mins
Serves - 6

DIRECTIONS

1. Place a pot on a medium heat and add in olive oil. Stir until it heats up, then add in rice and continue stirring til rice changes from transparent to white.
​
2. Add all the water and stir well. When the water comes to a boil, add in the peas.
​
3. When it is brought to the boil once again, reduce the heat and gently simmer until it is cooked through, stirring occasionally.
​
4. Ready to serve warm or cold, as a side or main.
