Sausage Casserole
INGREDIENTS

8 pork sausages

1 medium onion - finely chopped

2 cloves of garlic - finely chopped

3 tomatoes - finely chopped

1 chicken stock cube
-
2 bell peppers - diced
-
1 tablespoon mustard
-
1 table spoon honey
-
2 tablespoons vegetable/olive oil
Prep Time : 5 mins
Cook Time : 25 mins
Serves - 4

DIRECTIONS
​
1. Heat oil in a pan and fry the onions and sausages.
​
2. Once onions are translucent and sausages are browned, add the garlic, tomatoes and peppers and fry for 3-4 mins.
3. Add salt and pepper to taste before adding water and stock cube.
​
4. Cover and cook for 20 mins on medium heat .
​
5. Remove lid, add the mustard, honey and any herbs (oregano, rosemary, basil) if preferred.
​
6. Allow the dish to sit for 5 minuted before serving.
