Sweet Potatoes + Beans

Baked sweet potatoes and smoky beans

INGREDIENTS

​

  • 2 large sweet potatoes

  • 1 small onion finely chopped

  • Olive oil

  • 2 tsp red wine vinegar

  •  ½ tsp, plus a pinch smoked paprika

  •  200g tin chopped tomatoes

  • 400g tin mixed beans in water, drained and rinsed

  •  2 tbsp soured cream

DIRECTIONS

1. Cook the sweet potatoes in a 200C/fan 180C/gas 6 oven for 45 minutes – 1 hour (or microwave them for speed).

​

2. Cook the onions in 1 tbsp of olive oil, then stir in the vinegar, paprika and tomatoes and cook together until thickened. Add the beans, let cook together for 5 minutes and then add your seasoning

​

3. Cut the potatoes in half, mash the insides, then split the beans between them. Add a little soured cream and a taste of paprika.
